How to use it
Heat destroys the enzymes in raw honey, so treat heat as the one thing to avoid.
- Stirred into warm — not hot — water or milk
- Straight off the spoon for a sore throat
- Over curd, oats or fruit
- In dressings, where the floral note actually shows
- Not for baking at high heat — use a cheaper honey for that

If it crystallises, it is real
Raw honey granulates — glucose comes out of solution in the cold, and by January most of the jar can be solid. Commercial honey is pasteurised and ultra-filtered precisely to stop this happening on a shelf, which also removes the pollen and the enzymes. To loosen ours, stand the jar in warm water for a few minutes. Never microwave it.
